Welcome to Rasmalai Recipe. com. Rasmalai is without question my most favourite dessert. Rasmalai consist of dumpling made from cheese soaked in thickened sweet milk delicately flavoured with cardamom. Best served chilled and garnished with dried fruits.This Rasmalai Recipe is very easy to follow.
Ingredients For Rasmalai Recipe
# Paneer – made from 1 liter of milk
# Sugar – 1 cup
# Milk – 1 liter , whole milk
# Water – 4 cups
# Sugar – 1/2 cup
# Almonds or pistachios – 1/2 cup thinly sliced
# Cardamom Powder – 1 tablespoon
Preparation Method Rasmalai Recipe
Step – 1
Take a pan add the water and 1 cup of sugar and boil till all the sugar is dissolved. Then switch off and place the syrup to one side.
Step – 2
Kneed the paneer until it is smooth in a platter. Make into small balls and slightly the centre.
Step – 3
Once the balls have been made,reheat the syrup to boiling point, then slow to a simmer and add the paneer balls. Cook for 10 minutes then turn off the heat.
Step – 4
Take another pan and boil the 1 litre of full cream milk with ½ cup sugar, till it reduces to 75 % of its original volume. Turn off heat and add them to milk mixture. Chill for a few hours.
Serving Suggestion
Before serving garnish Rasmalai with dried fruit.

Ingredients for Pakistani Rasmalai Recipe
Whole Milk – 8 cups (divided)
Lemon Juice – 2 Tbsp
Water – 5 cups (in a pressure cooker)
Sugar – 1 cup
Saffron – pinch
Cardamom Powder – 1/4 tsp
Pistachios & Almonds – 2 Tbsp, roughly chopped
Sugar for the Ras – to taste
Preparation method for Pakistani Rasmalai Recipe
1. Take 4 cups of milk in a deep pan and put it on a medium flame to be boiled.
2. Put the remaining 4 cups of milk in another deep pan and boil it on low flame. Keep boiling the milk while staring it. While the milk is boiling, grind a small amount of saffron with sugar and add it in the boiling milk.
3. Once the other 4 cups of milk on the medium flame is well boiled, add a few drops of lemon juice.
4. The milk would start to curdle, take the milk off the fire and remove the paneer from milk with the help of cheese cloth.
5. Pour some cold water over the cheese and then hang it for a about half an hour so that all the liquids drain from cheese.
6. Now after half an hour take off all the cheese from cheese cloth and run it through a food processor or using your fingers kneed it to get smooth dough. If you choose to kneed by hand then obviously it would take more time.
7. Make 12 small balls of the paneer by dividing the paneer into 12 equal portions. Prepare medium size balls by rolling each portion in your hands. Once each ball is ready, press it so that it flattens out.
8. Take a pressure cooker and add water and sugar and dissolve it. Also add the paneer balls in it.
9. Close the lid and cook until one whistle sounds. After that set the timer for 5 minutes and cook it for five minutes. After five minutes take the cooker off the fire and place it under the tab, pour cold water on cooker to remove the pressure.
10. Take out the paneer balls from the cooker into a bowl and let them cool.
11. The other four cup of boiling milk meanwhile is reduced to half. Add sugar and cardamom powder and nuts in the milk. Remove the milk from fire and place it aside. One the paneer balls cool down, gently squeeze the syrup out and place them in milk.
12. Chill it and garnish with chopped nuts.

Rasmalai is an Indian desert which is made by thick milk and sugar. There are different ways and methods of cooking rasmalai. For this particular recipe you would need rasgullas. That can be either prepared at home or brought from market as well. The homemade rasmalai taste even greater.
Ingredients for Easy Rasmalai Recipe
Rasgullas – 10
Milk – 3 cups
Condensed milk – 2 tbsp (optional)
Sugar (or) Sugar syrup – 1/2 cup (Its either sugar or sugar syrup not both)
Chopped Nuts(pista, cashews and badam) – 2 tbsp
Saffron – 3 to 4 strands
Cardamom powder – 1/2 tsp
Preparation method for Easy Rasmalai Recipe
1. In the condensed milk add a teaspoon of warm milk and a few strands of saffron and keep this mixture aside.
2. In a deep pan add milk and boil it on a medium flame, keep it on the stove until milk starts to get thick and reduce to half.
3. Now add the condensed milk and saffron mixture in the boiling milk and keep it stirring. Then add sugar or sugar syrup into the boiling milk and keep mixing it well. This mixture is known as rabri.
4. Fry the dry fruits in oil or ghee and add it in the rabri. Now add the cardamom powder as well and mix once again.
5. At the end you need to add the rasgullas, before adding them in the mixture squeeze them gently to remove the sugar syrup from them. After that, cook the rasgullas for another five minutes until they absorb the milk and expand in size.
6. Remove from the flame and cool the desert. Then put it in the refrigerator until gets well chilled.
7. You can sprinkle the fried nuts on rasmalai once it is ready and chilled.
